About our Merlot : 
              

Our wine is the product of hands-on love and a single plot vineyard

We openly confess that our heart belongs to the vineyard. Throughout the year we manicure the canopy in endless hours to perfection, aiming at creating optimal conditions for perfect ripening.

At harvest, the bunches are carefully handpicked, with a stringent selection and sorting of the berries already in the vineyard before it is transported in small 15 kg crates, guaranteeing that only the best and undamaged fruit makes it into the cellar. Here, the fruit is controlled again on a sorting table, then destemmed, slightly crushed and finally fermented in stainless steel fermenters.

However, before fermentation has started, we generally “bleed” the mash, i.e. drawing off some free run juice. This enhances the concentration of our main wine, while yielding some beautiful grape juice of top quality, which is then cold-fermented separately to become our popular Pink Merlot.

Malolactic fermentation and further maturation of our red wine takes place in small 225 l oak barrels selected from top French cooperages. After one year of barrel maturation, the different batches are carefully evaluated and blended in tedious series of blind-tasting, and the optimal combination will eventually make up our flagship wine Bein Merlot.  

Bein Merlot

Merlot in classic Pomerol style, elegant and complex, matured for one year in small oak barrels, of which between 40% and 70% are new. The barrels are selected from top French cooperages, made up of about 95% tight-grain French oak and about 5% American oak for complexity. Our Merlot is generally complemented with a splash of Cabernet, either Cabernet Sauvignon or Cabernet franc or even both, depending on the vintage. After bottling we allow the wine to mature another year in the bottle before release. It can be enjoyed young, but it will certainly reward the patient with the development of beautiful maturation flavours obver many years.

Serving suggestion: serve at 18oC , open an hour before or decant, best with a meal such as roast venison, or a hearty pasta dish, also delicious with fine cheese and bread.

Bein Little Merlot

This wine is made in the same quality and style as our flagship Merlot, but matured in third and fourth fill barrels. It is generally less tannic and earlier accessible than our flagship Merlot, though we still see it as a very serious wine, well able to mature for  2-3 years. It is made up from the batches deriving from different corners from our vineyard, from younger vines or from other barrel regime, which haven't been included in our flagship blend. And like the latter, it is as well complemented with a splash of Cabernet. 

Serve ideally at 18oC, best with a meal: with its attractive flavours of dark berries and its rich and supple palate, it sits well on any table, from vegetarian to richly sauced beef.

Bein Pink Merlot

The must for making this wine is the bleeding juice from the grapes of our flagship wine, in other words the free run juice from our very best grapes. This juice is then further processed like a top quality white wine, inoculated with special yeast and slowly cold-fermented at 14oC over two to three weeks. This allows the wine to develop the fresh floral aromas, which are so sought-after in fine roses. After a short settling period, the wine is then bottled for an early release, usually by May of the same year. 

This fruity dry Rose is the perfect wine for every occasion:  As aperitif, as versatile companion to many dishes such as salads, smoked salmon, fish and shellfish, Pizza or any other summer dish, or simply enjoy on its own as the perfect sundowner to match the always stunning pink sun-sets of Africa!

Serve chilled and drink young, best in its first year of production.
