THE WINE cellar
Our new cellar has been completed just in time for the harvest 2005. Tailor-made for the production of our handcrafted quality Merlot, it allows us to pursue our perfectionist winemaking ambitions, giving us complete control over every single step in the creation of our Merlot from harvest till bottling.
Focused on optimal handling from fruit to wine, the careful planning resulted in an ideal workflow - a cellar, in which to work is sheer pleasure. There are no fancy gadgets, though all the tools are of the latest enological standard: Temperature controlled, stainless-steel tanks for an undisturbed fermentation, a modern lobe pump for smooth pumping actions, a traditional basket press for gentle juice extraction, and the air-conditioned barrel cellar finally allows us to mature the young wines to perfection.
